Recipe of the Day: 3-Cheese Muffins
Imagine a muffin. Imagine a savoury muffin (work with me here - they have them in Australia and NZ and are yummylicious). Imagine a cheese muffin, all cheesy goodness and wonderful aroma. Then imagine a cheese muffin… made with 3 kinds of cheeses. I’m thinking feta and parmesan in the batter itself, and a sprinkling of some other kind of cheese - the kind that will melt and bubble on top, if sprinkled over at the last minute in the oven. additional ingredients could be sundried tomatoes or jalapenos for a spicy kick or bacon… which makes every savoury dish better. the permutations are endless - cream cheese? goat’s cheese? gyuyere? blue cheese for the adventurous (and those not afraid of bad breath)?
serve with big fat sizzling sausages, grilled tomatoes, mushrooms grilled or fried in butter and garlic, and eggs - scrambled, fried sunny side up, poached or baked, in place of toast.
